Organic White Dragon Well
Pine nuts and furikake.
This Organic White Dragon Well is made with leaves from a varietal typically used for Anji bai cha, harvested prior to the Qing Ming rains in early April. Teas made during this period of time are especially prized, because the leaves harvested are typically first of the season; the plant has had the winter season to store nutrients in its leaves, resulting in particularly flavorful tea. Grown sustainably and NOP-certified organic, the specialized fertilization and care used for this tea produce a full-bodied, focused sweetness characteristic of the finest Dragon Wells.
That sweetness is noticeable at the front of the palate, appearing even when just decanted from a hot cup or gaiwan. As the tea cools, that sweetness becomes more pronounced. This note is paired with a lightly nutty roasted flavor distinct to hand-fired Dragon Wells, and a smooth yet delicate texture.
