Meng Ding Gan Lu is a tea that requires a practiced hand; the leaves are wok-roasted, then kneaded repeatedly to produce its signature curly shape while preserving the delicate fur on the leaves. When done right, the resulting tea is wonderfully complex: lightly spiced aroma on the nose, toasted flavors in the cup, and a pleasant sweetness that becomes more apparent as it cools down.
