Sencha is a delicate green tea, and it is important to treat it with care to avoid excessive bitterness when brewing. Therefore we recommend using water no hotter than 70C (158F) and preferrably somewhere between 55 and 65C (131-149F). After pre-warming the steeping cup or teapot fill with approximately 3-5 grams of leaf 10-12 oz of water and infuse for 2-3 minutes. If prepared in this way Sencha should yield several infusions. Always adjust quantity of leaves, infusion time, and water temperature according to your personal preferences.
