Unfortunately, increases in cost often does not mean increases in quality. As a matter of fact, a decrease in quality has almost been a fact of life in today’s white tea market. Fujian, China: Fujian is a coastal province in southeastern China where the finest oolong, white, and jasmine teas are produced. According to the written record, teas have been produced there for well over 1,600 years. Growers currently produce five different categories of tea, most of which originated in the province.
This is a straight forward no non-sense white tea and we like to brew it the same way. We suggest using 3-5 grams of tea per 6 oz of water (it will seem like a lot due to the large bulky nature of the white tea leaf size) with near boiling water for a 1-2 minute infusion. Drain into another cup or vessel, allow to cool a bit, then enjoy! Alternatively, due to the non-aggressive nature of white teas, they can also be brewed at a lower temperature for a longer steeping. Enjoy when the water temperature cools down to lukewarm. As always, don’t be afraid to experiment!
