We found this work of art as we searched Southwest China for great teas. It’s produced in the Sichuan province, where the arrival of spring is often synonymous with the arrival of green teas from the Meng Ding mountain. Meng Ding Bird’s Tongue has a deep, jade-green color leaf bud with a pointy tip. The cup displays an elegant, sweet, floral green note that lingers on the palate. This tea demands your attention in order to reward you with its unforgettable aromatics and flavors.

BREWING SUGGESTIONS

This is a tea that is more sensitive to water temperature during infusion. Water that is too hot can cause unwanted astringency, and take away the elegant floral notes. We recommend starting with about 4-5 grams of tea in a 6 oz gaiwan. Steep this tea for a full minute with lower temperature water (60C or 140F) to start with. Then adjust the infusion time and temperature of the water according to your own preferences.
