Drinking this tea echoes the sensation of walking through a newly-flowered spring meadow — the aromatics and flavors are insistent, but not overpowering. The sweet, umami notes present in each cup that are sure to please any veteran tea drinker as well as the newly introduced.
Jiangsu, China: Jiangsu province is in eastern China, and is the home of Tai Hu (Lake Tai), a famous green tea region situated around Dong Ting Shan. The mist and fog created by the large body of water helps regulate temperature and humidity. These conditions, along with the naturally acidic soil there, contribute to the qualities of exceptional teas.
We recommend a Gaiwan preparation for this tea. Preheat the Gaiwan and fill with 3-5 grams of leaves. Infuse with relatively cool water, 55-65C, 130-150F and infuse for 2-3 minutes (or longer for more flavor and intensity). To serve, pour into a pitcher or directly into warmed tasting cups and enjoy. Bi Luo Chun may be re-infused several times by gradually increasing steeping time and water temperature.
