Jing Shan Mao Feng is also known as Jing Shan Buddhist Tea. Since the Tang Dynasty, local monks have been known to harvest and enjoy the tea produced there. It may not be a famous tea to most tea lovers in the west or even in China, however, the Jing Shan (Jing Mountain) has a very important pedigree. During the Tang Dynasty, the tea sage Lu Yu was said to have worked on his classic “The Scripture of Tea" (or Cha Jing) in Jing Shan. Jing Shan Mao Feng features long, elegantly twisted leaves. The cup is sweet with good flavors, aromatics of fragrant wild greens and a hint of mild floral notes. The light greenish yellow cup is bright and clear. This Mao Feng style green tea is meant to be an unaggressive and unintrusive green tea. It can be wonderfully enjoyable when steeped with mid to high temperature water.
We cupped this Mao Feng green tea with very hot water but a low to mid temperature infusion with a longer steeping time will be very enjoyable as well. Since this tea is unaggressive in nature, you shouldn’t be afraid to use more tea with lower temperatures for longer and repeated infusions. Use higher temperature infusion for more strength or lower temperature infusion for more texture, with a few trials you will be able to find the range that is suitable just for you.
