Brewing Suggestions

Tien Mu is a name given to the lakes atop the twin peaks of a mountain in which the sky is reflected. Qing Ding may be translated as Green Summit; Qing being the way Chinese express this tea's fresh, grassy shade of green and summit signifying both the tea's origin on high mountain peaks and also its unsurpassed quality. The words, Tien Mu, are also interpreted as Eyes Looking Toward Heaven, and are appropriate for the heavenly flavor of this tea. Tian Mu Shan (Tian Mu Mountain) is due west of Hangzhou, near the edge of Zhejiang province, and its tea is one of Zhejiang's most famous classic greens.

The flavor is light yet deep and intriguingly sweet to the nose and on the tongue. It is a vivid yet gentle flavor, springtime fresh and hard to resist.

Best prepared with water at 70-75°C. Use 5 grams of tea in a 6 oz. gaiwan and infuse for approximately 1-2 minutes. A longer infusion time will produce more intensity but also astringency. A lower water temperature and/or a longer steeping time will reveal more subtle flavors and aromatics. Always adjust quantity of leaves, infusion time, and water temperature according to your personal preferences.

My first time trying this prized tea. Delightful fragrance first infusion with gong fucha method, three subsequent infusions more mellow, equally delightful. This is a very light and airy oolong, lovely.
