China’s Huang Shan (Yellow Mountain) is protected as a UNESCO heritage site. It’s location and unique terroir produces some of the most flavorful teas. While the prized location also has a tendency to make things more expensive, we were delighted to find this well-priced, wonderful green tea. Huang Shan Yun Wu is grown at high altitudes of over 1,000 meters (over 3,200 feet) and fed by the mountain’s natural spring mountain waters. This tea has a sweetness that lingers in the palate long after the tea is gone. It’s beautifully simple and elegant and perfect for your enjoyment at home.
Best prepared with water at 70-75°C. Use 5 grams of tea in a 6 oz. gaiwan and infuse for approximately 1-2 minutes. A longer infusion time will produce more intensity and astringency; a lower water temperature and/or a longer steeping time will reveal more subtle flavors and aromatics. Always adjust quantity of leaves, infusion time, and water temperature according to your personal preferences.
