Brewing Suggestions
This cake is produced from our own unique blend of unfermented sheng tea from the six famous Meng Hai growing regions. This vintage is full of complexity, with a slightly smoky nature that adds to the full-bodied flavor and richness. Ready to be enjoyed now, or completely suitable for aging.
This "sheng" tea cake is made using our own formula of different sized tea leaves, creating a unique complexity unlike any other tea. The "cake" form is pressed using just the right amount of pressure so that it is neither too hard nor too soft. Tea cakes that are pressed using too much pressure are difficult to break up; not using enough pressure will cause the cake to crumble. To enjoy this tea, gently break the cake apart by hand or by using a
puerh knife
.
Start from the edge of the cake and work your way in. It's best to break the entire cake up and blend all the leaves together before steeping. For storage, rewrap the tea back using its original paper and place into your favorite tea storage tin or urn for safe keeping.
Sheng puerhs tend to display more strength and can be aggressive. While some suggest using boiling water for all puerhs, we recommend using hot -- but not boiling -- water (around 80C) for multiple shorter infusions. Start with a baseline of 3-5 grams of tea per 6-8 oz of water and adjust steeping time, amount of tea leaves and water temperature based on your personal preferences.
