The 2007 Pu Erh Bing Cha is the type of shou (finished) cake many residents of Yunnan, the home province of pu erh, turn to as their everyday beverage. The leaves are large and hearty. The robust flavor is slightly sweet with a bit of earth that remains in the background. It has a dark brown brew and can develop a slightly bitter edge when oversteeped. The cake is ready to drink now and doesn't require further aging. $85 per 375-gram cake.8" round Weight - 13.5oz.


To prepare pu erh tea from a cake break off a small piece and gently crumble it into a teapot or gaiwan. With this tea use approximately 3 teaspoons for a six-ounce gaiwan. Quickly flush (cover the leaves with hot water and pour it off) and appreciate the aroma of the moistened leaves. Then infuse with near-boiling water for 3 minutes and decant into a pitcher for serving. Steep until the brew loses flavor.

This Pu Erh has a warm and somewhat fruity flavor, not as earthy (to my palate) as some of the other Pu Erh teas. It will brew up to three times, and releases further flavors with repeated brewing.
