Superior White Peony hails from China's southeastern coastal province, Fujian, which is famous for producing the world's finest white teas. Our White Peony is hand-picked, with harvesters meticulously selecting the uppermost trio of young shoots: one unopened bud, and two immediate young leaves. The tea is partially sun-dried prior to oxidation, and then lightly roasted to rid the leaves of any remaining moisture. Great care is taken to ensure that each trio of leaves remains intact, and that the natural appearance of the tea plant is preserved.

Superior White Peony displays a sweet, mellow, and slightly fruity flavor profile, and a shimmering honey-gold infusion. A velveteen mouth feel yields to a long and surprisingly complex finish, in which a variety of floral notes emerge.

Preparation:
We recommend brewing in a pre-warmed gaiwan with 3-5 grams of tea, and water temperatures between 175 and 190 degrees Fahrenheit (80-90 Celsius) for 2-3 minutes. Experimenting with different temperatures and steeping times is, of course, always encouraged.
