According to the written record, teas have been produced in Fujian Province for well over 1,600 years. Growers currently produce five different categories of tea most of which originated in the province.

From China's southern province of Fujian, comes this beautiful artistic expression of white tea. Silver Needles is entirely hand-picked, gently sun-dried in warm spring sunshine, and then hand sorted to select only the most perfect white down covered unopened buds (it takes more than 10,000 hand sorted leaves to make a kilo of this fabulous tea).

This tea exhibits a harmony of flavors from fresh cut greens, to sweet toasted wheat, from light nuttiness, to soothing spring flowers. The low caffeine and extra anti-oxidant content are additional reasons to stock up.

Preparation:
Silver Needles may be prepared in an ordinary teapot, but the best way to exhibit its unique beauty is with a traditional covered teacup (gaiwan). In a pre-heated cup, place approximately 2 tsps. of leaf and add a few drops of hot water to release the aroma before infusion. Then cover near boiling water and steep for 2-3 minutes. Silver Needles may be re-infused several times by gradually increasing steeping time and water temperature.
