Just In: Extraordinary Oolongs from Phoenix Mountain
|
We’re excited about
our newest teas, two legendary oolongs from Feng Huang Shan (Phoenix Mountain) in northeastern Guangdong Province. They’re an
exotic treat guaranteed to delight your favorite tea lover. These teas are among China’s most famous of the partially
oxidized variety, renowned for their intense florals, honey-like sweetness, and long finish. If you haven’t tasted Phoenix
Mountains oolongs before you’ll be astonished at how these teas take oolong’s distinctive floral character to the max without
any added flavor—only the natural essence of the well oxidized, dark roasted leaf itself. The elegant long, dark, twisted
leaves make it clear where the wu long, literally “dark dragon,” family of teas got their name. Only a few oolongs
in China are still produced using traditional methods that yield the “dark dragon” leaf. Our selections are from the winter
harvest.

Huang
Zhi Xiang
|
Huang Zhi Xiang, the darker roasted of the two, has a remarkable signature honey tone. Although it
tastes great straight from the gaiwan, it’s also a prized tea for gong fu preparation. Locals like to almost fill a gaiwan
with leaves and brew for a short time (one or two minutes) with near-boiling water. While this method produces a slightly
bitter edge, it highlights the powerful sweet finish. Another option is a long brew (up to five minutes) in much cooler
water, around 165 degrees F. This approach really brings out the nectar-like honey tone.

Bai Ye
|
Bai Ye is the truly floral tea of the pair, a potent reminder of tea’s lineage in the camellia
family. This variety is perhaps the most popular oolong from the Phoenix Mountain region. Like Huang Zhi Xiang, it yields
different experiences depending on the preparation method. Experiment with both and see which you prefer!
