Due to weather conditions and intense competition from domestic buyers, the cost of high quality white teas has reached stratospheric levels this year. White teas have become international bestsellers because of its exotic qualities and high antioxidant content. In addition, a growing “aged” white tea market in China has turned this once rare varietal into a prized collector’s item. Because of the atrocious asking prices and the continued decrease in quality, we have decided to try something different this season by allowing a standard White Peony to lightly oxidize, resulting in a new white tea that’s almost whimsical and easy to like. The oxidation process produces a champagne-like liquor and a memorable candied, preserved plum flavor.
