PREPARATION: For perfect Phoenix Oolong the recommended equipment is a regular teapot (ceramic or glass) or individual gaiwans (steeping cups) in order to bring out the full depth of aroma and flavor. Allow approximately 3-5 grams of leaf per person and infuse with near-boiling water for 2 to 3 minutes. Resteep 3-4 times, or until the tea loses flavor, gradually increasing infusion time and temperature.
