Bai Ye Phoenix Oolong Bai Ye is famed for its intense florals, and once you taste it you'll be astonished that this extraordinary oolong from Guangdong Province's legendary Feng Huang Shan (Phoenix Mountain) is produced without any additional scenting. The "flowers" are all in the leaf itself, a powerful reminder of tea's heritage in the camellia family. Unlike floral green oolongs, Bai Ye is dark roasted, adding more complexity. Anyone who appreciates floral oolongs must try this remarkable tea!

PREPARATION: For perfect Phoenix Oolong the recommended equipment is a regular teapot (ceramic or glass) or individual gaiwans (steeping cups) in order to bring out the full depth of aroma and flavor. Allow approximately 3-5 grams of leaf per person and infuse with near-boiling water for 2 to 3 minutes. Resteep 3-4 times, or until the tea loses flavor, gradually increasing infusion time and temperature.
